HOW TO MAKE HEALTHY VEG CLEAR SOUP RECIPE

INGREDIENTS

Finely chopped carrot – ¼ cup

Finely chopped beans – ¼ cup

Finely chopped cabbage – ¼ cup

Finely chopped onion – 1 small

Finely minced ginger and garlic – 1 tsp

Olive oil – 2 tsp

Cinnamon – 1 small piece

Clove – 1

Veg or non veg stock – 1 cup

Water – 3 or 4 cup

Salt to taste

Finely chopped coriander leaves  – 2 or 3 tbsp

Corn flour  1 tbsp mixed with ¼ cup water

Maggi magic cubes

Pepper pwdr as required

PREPARATION

Make veg stock by boiling veges OR use 1 magic cube dissolved in 1 cup of water . Maggi magic cube is also known as enhancer ingredient. It is used in restaurants , to make soups more flavourful .

*** If not adding stock ,then reduce the water .

VEG CLEAR SOUP

METHOD

Heat 2 tsp oil in a pan ,add cinnamon + clove . [ don’t burn ]

Add onion + ginger + garlic and fry till translucent . [don’t burn ]

Add all the veges one by one ,mix well .

No need to fry or cook .

Add water + stock + salt and stir  .

Boil for 5 mins .

The veges should not become soft , it should have the crunch .

Now add the cornflour mixture and mix .

Again cook for 2 mins.

Off the flame and add the coriander leaves .

While serving add pepper pwdr as required .

Cornflour is optional ,it gives a smooth texture to the soup .

NOTES

Maggi cubes are easily available in grocery shops.
